Baked Portobello Mushrooms

Baked Portobello Mushrooms

Yields 2 to 4 servings as a side dish

Ingredients:

  • 2 to 3 Portobello mushrooms caps, remove stems
  • ½ cup shredded mounceszarella cheese
  • 2 slices of ham, cubed
  • 2 fresh button or shiitake mushrooms, remove stems
  • 1 tablespoon chopped garlic
  • Salt
  • Ground black pepper
  • 4 tablespoon extra-virgin olive oil
  • Parsley for garnishing

Directions:

  1. Preheat airfryer to 350°F
  2. Brush Portobello mushrooms with olive oil.
  3. Dice button/shiitake mushrooms
  4. Put Portobello mushrooms, cap side down, in airfryer basket.
  5. Fill Portobello mushrooms with cheese, followed by the cubed ham, diced mushrooms and garlic.
  6. Season with salt and black pepper.
  7. Drizzle olive oil over the mushrooms
  8. Baked in preheated airfryer for about 12 minutes, or until the cheese is bubbly and the toppings start to brown.
  9. Garnish with fresh or dried parsley.

Sweet Potato Fries

Yields 2 to 4 Servings

Ingredients:

  • 2 to 3 large sweet potatoes
  • 1 tablespoon oil
  • Salt
  • Pepper

Directions:

  1. Wash and peel potatoes, then cut into strips.
     
  2. Add oil and coat potato strips.
     
  3. Cook 320°F for 15 minutes. *Tip – shake basket after first 15 minutes.
     
  4. Raise Airfryer temperature to 350°F and cook for another 5 minutes.
     
  5. Serve piping hot.
     
  6. Salt & Pepper to taste

Yields 2 to 4 servings

Ingredients:

  • 1 pound fresh Brussels sprouts
  • 5 tablespoon high-quality olive oil
  • 1/2 teaspoon salt

Directions:

  1. Set Airfryer to 390°F degrees and preheat.
  2. To prep Brussel sprouts, remove any rough outer leaves, trim stems and cut in half vertically.
  3. Rinse and shake dry.
  4. Place prepped Brussel Sprouts in a bowl, and coat with olive oil and salt.
  5. Place Brussel Sprouts in airfryer basket and cook for 15 minutes. *Tip - For best results, shake basket halfway through.
  6. The sprouts are cooked when the outsides are caramelized and a bit crispy.

Roasted Potatoes

Roasted Potatoes

Yields 2 to 4 Servings

Ingredients:

3 to 4 potatoes of your choice
1 ¼ cup olive oil
Salt (to taste)

Directions:

  1. Cover unpeeled potatoes with cold water in a deep pot and place on stove.  
  2. Bring the water to a boil and boil allow to boil for approximately 10 minutes or until potatoes are soft. *Tip - You can check this by using a knife.
  3. Remove pot from heat and drain water.
  4. Peel the potatoes, put back in colander and shake. *Tip - For best results, potatoes will have a rough surface.
  5. Drizzle the olive oil generously over the potatoes and place in the basket of the Air Fryer.
  6. Set the Air Fryer to 390°F and cook the potatoes until golden brown and crispy.
  7. Sprinkle with salt to taste and serve hot.
